Have you ever tried making instant pudding with coconut milk and it didn’t work out? You need 100% coconut milk for it to work. There’s a big difference between Silk Coconut Milk (which I love in my morning coffee) and 100% coconut milk.
There are a few things I love about this recipe. One, it takes like five minutes to make. Most days I really have no time to make a dessert. Second, it only takes three ingredients! And third, you can add whatever you like—next time I’m going to add toasted coconut to the top. Mmm.
Okay, let’s get started. You will need:
Pour 100% coconut milk in a mixing bowl and mix thoroughly. Slowly add banana cream instant pudding and mix well. Slice banana and line on the bottom of your pie dish. Fill with banana cream pudding and layer the top with sliced banana’s. This recipe makes four servings.
